Looking for something to do with those left over peaches? Here's a great way to make a quick dessert. Chop up the peaches and toss with a few mini-marshmallows and a few chocolate chips. Roll out a pre-made pie crust and cut into quarters. Spoon on a little of the peach mixture onto each pie quarter then fold it over and seal with a fork. Prick a couple times to let steam vent and sprinkle each piece with cinnamon sugar. Cook the dessert at 400 degrees for about 20 minutes (until edges begin to brown). These are fast, easy and delicious. I just love finding good recipes in my monthly mags.
As a side note here, I'd use a cookie sheet with sides and line it with greased foil (or use a stone) because these do make a little bit of a mess when cooking.
